NS 4250 - Nutrition Communications and Counseling Spring. 3 credits. Letter grades only.
Prerequisite: NS 1150 , NS 1220 , and NS 2450 . Enrollment limited to: senior and junior students. Enrollment preference given to: senior dietetics students/nutrition majors.

Students learn the theoretical basis of effective health promotion communications and develop effective nutrition communication skills through application in a variety of settings. Provides hands-on experiences in counseling, educational program development, and oral and written communications.
Outcome 1: Identify key counseling theories and understand their application to a helping profession.
Outcome 2: Apply basic communication and counseling skills to a helping profession.
Outcome 3: Understand the theoretical basis for health promotion communications and for behavior change and apply theory to practice.
Outcome 4: Conduct and interpret individual nutrition needs assessment via interviews and observations, set goals, and evaluate progress.
Outcome 5: Critique weight management programs for application in counseling and educational settings.
Outcome 6: Understand the non-diet approach to health management. Apply to critique of current popular diets.
Outcome 7: Identify differences between optimal and disordered eating and identify counseling strategies for use with disordered eaters.
Outcome 8: Critique nutrition education resources for application with the general public and low income audiences.
Outcome 9: Prepare an educational brochure for the general public.
Outcome 10: Work with a team to design, implement and evaluate a nutrition education program for a specific audience incorporating issues of diversity.
Outcome 11: Promote and report impact of an educational program on audience through community networks including the newspapers and newsletters.
Outcome 12: Facilitate and evaluate a group learning process.
Outcome 13: Deliver an effective oral presentation.
