This course further expands on the material covered in introductory courses in nutritional biochemistry by providing a broad perspective of the function, homeostasis, and metabolism of the principal dietary micronutrients.

Outcome 1: Understand the function and metabolism of selected vitamins and minerals.

Outcome 2: Describe aspects of homeostatic regulation and specific mechanisms of physiological control.

Outcome 3: Describe the scientific basis of micronutrient requirements and recommendations.
