NS 3030 - Nutrition, Health and Vegetarian Diets

Prerequisite: NS 1150 .

Course Goals: The three primary goals of this course are to present the scientific evidence concerning: 

  1. the nutrient profile of a vegetarian dietary pattern 
  2. the health effects of consuming vegetarian diets 
  3. the biological characteristics of those who eat vegetarian diets.


Outcome 1: Demonstrate the ability to describe the experimental evidence concerning the characteristics and health impact of vegetarian diets to not only colleagues, but also lay/target audiences.
